My kids love spotting birds\u2019 nests; especially now, in the leafless trees.\u00a0 Yesterday as we\u00a0walked T\u00a0to preschool, J found one that had fallen out of a tree.\u00a0 Of course, he wanted to pick it up, bring it home, and put it with the rest of his treasures.\u00a0 I\u2019ll take the hermit crabs, ant farms, fish, frogs \u2013 even encourage them; but I draw the line at birds\u2019 nests.\u00a0 We compromised and made our own edible bird nests.<\/p>\n

To make your own edible birds nest, make a batch of birds nest cookies (no bake cookies, below is my Mom’s recipe).\u00a0 When dropping cookies onto the wax paper use a spoon to make a dip in the center of each cookie to hold the \u201ceggs\u201d.\u00a0 Allow the cookies to cool.\u00a0 Sprinkle colored coconut (see recipe below) in the center of the nest.\u00a0 Lay egg shaped candy on \u201cnest\u201d.\u00a0 And no, the butterfly is not edible, but I just love it…so springy!!<\/p>\n

Birds Nest Cookies<\/h2>\n

\u00bc c unsweetened cocoa powder<\/span><\/p>\n

2 c white sugar<\/span><\/p>\n

1\/2 c milk<\/span><\/p>\n

1\/2 c butter<\/span><\/p>\n

3 c quick cooking oats<\/span><\/p>\n

1\/2 c peanut butter<\/span><\/p>\n

1 tsp vanilla extract<\/span><\/p>\n

1 pinch salt<\/span><\/p>\n

Directions: \u00a0In medium sauce pan, heat cocoa, sugar, milk and butter over medium heat. \u00a0 Bring to a boil\u00a0and boil for 1 minute and then remove from heat. Fold in\u00a0oats, peanut butter and vanilla and salt. \u00a0Drop on wax paper.<\/span><\/p>\n

Tinted\u00a0Coconut<\/h2>\n

Add your favorite food coloring to 1-2 tbsp of water until you reach the desired shade. Fill a jar with 2 cups of\u00a0shredded coconut.\u00a0Pour in\u00a0colored water.
